OUR STORY

Born from the creative mind of award-winning chef and founder Jennifer Evans, FRICKIN’ Fried Chicken is the bold fast-casual spin-off of Birdies Bangkok—created to bring the same obsession with quality, flavour, and execution into a more casual, craveable format.

What started as a love for comfort food and a belief that quick-service dining should never mean compromising on quality became FRICKIN’: a concept built to deliver premium fried chicken with chef-driven standards, playful energy, and zero rules.
 

Designed for those who want serious flavour without the formality, FRICKIN’ offers a more convenient way to enjoy elevated comfort food—whether dining in, grabbing it on the go, or ordering straight to your door with delivery now available.

Ratish Sachathamakul is a Bangkok-based restaurateur and founder behind multiple hospitality concepts in Thailand, leading JR Hospitality Co., Ltd. and Innovative Food Trucks Co., Ltd., the companies behind brands including Birdies Bangkok, Cholos, and FRICKIN’ Fried Chicken. With over 17 years of experience across hospitality, food and beverage, business development, and real estate development, he has a strong background in building and scaling restaurant concepts across dine-in and delivery. He focuses on creating brands that are operationally strong, creatively distinct, and built for long-term growth, with hands-on involvement across concept development, brand identity, systems, and multi-location expansion.

He has also been involved as a partner in notable ventures including Tropic City—recognized on The World’s 50 Best Bars—as well as Aesop’s, featured on the Michelin Plate, and Larder, and serves as an operating partner and director at Novotel Phuket Kamala Beach. FRICKIN’ is a natural extension of that journey—a bold, no-rules fried chicken concept shaped by experience, experimentation, and a focus on doing things differently.

MEET THE TEAM

JENNIFER EVANS — EXECUTIVE CHEF / CO-FOUNDER

RATISH SACHATHAMAKUL - DIRECTOR / CO-FOUNDER

Educated at Le Cordon Bleu Adelaide, Chef Jennifer Evans brings almost 20 years of experience in hospitality, food, and beverage. She refined her craft working in hatted restaurants across Australia before gaining national recognition on My Kitchen Rules Australia (2012). She is the creative force and brainchild behind the unique concept of Birdies Bangkok, and has led the evolution and revamp of brands such as Cholos Bangkok, alongside consulting on a range of reputable hospitality projects.

 

Her technical mastery and creative execution are at the heart of FRICKIN’, while her passion for wine and sommelier training—working with globally recognized labels—brings an unexpected level of artisanal precision to the bold, vibrant comfort food the brand delivers every day.
